The Russian Hybrid is a species created by mating a female Osetra sturgeon (Acipenser gueldenstaedtii) with a male Siberian sturgeon (Acipenser baerii). This hybrid is unique to Caviar Colony.
Age of harvest: The fish are harvested at a minimum of ten years of age
Grain size: 3mm to 3.5mm
Hue: The grains range from dark grey to golden brown
Taste profile: The Russian Hybrid has a unique sweetness reminiscent of Kyoho grapes with a nutty and creamy finish
